Blackened Steak Salad



One of the most requested items in my household is steak!

Steak on the BBQ, bacon wrapped steak, oven roasted steak, and pan seared steak... I LOVE STEAK!

On our last live video we talked about how to avoid over eating at your next holiday meal (which at the time of this post will be christmas). One of the 3 tips was to start with a salad to eat to gain vitamins, minerals, and fibre as well as get your fullness ques going!

Now back to the steaks!!

I could probably eat steak every single day in different variations! So since we just talked about eating salad first at your next holiday meal I think its a great idea to make that a STEAK SALAD!!

Just a note before we get started on our salad.... please feel free to add healthy ingredients such as onions, carrots, spinach, nuts, seeds, other meats, etc.

So here we go!

INGREDIENTS

1 Tblsp Paprika

2 Tblsp Pepper

1 Tsp sea salt

1 Tsp garlic powder

1 Tsp cayenne pepper

1/4 Cup olive oil

2 Tblsp balsamic vinegar

1 Tsp Dijon mustard

4-6 cups of mixed greenery (4-6 fists)

1/2 a pepper sliced (1 fist)

1/2 cup thinkly sliced onion (1/2 a fist)

2 smaller steaks (2 palms - 1 palm each)

2 Tbsp butter (2 thumbs)

3 Tbsp crumbled or shredded cheese (3 thumbs)

PREPERATION

For spice mixture:

Mix all ingredients in small bowl. (Can be made 1 week ahead. Store airtight at room temperature.)

For salad:

Whisk oil, vinegar and mustard in large bowl to blend. Season with salt and pepper. Add greens, bell pepper and onion and toss to coat. Divide salad between 2 plates.

Coat both sides of steaks with spice mixture. Heat heavy large skillet over high heat with oil until very hot. Add steaks and sear on both sides, turn down heat to medium and cook to desired doneness. Transfer to cutting board; let stand 2 minutes. Thinly slice steaks. Arrange slices on top of the salads. Sprinkle with cheese.
